The honest pecking order

The fine-dining names, Guy Savoy, Bouchon, Nobu, deliver food that stands without the star power. The entertainment names, Hell's Kitchen and the like, deliver theater plus solid food, and both are legitimate, just different.

The rule: if the menu stands on its own, the name is a bonus; if the name is the only event, the food rarely survives the hype.

Booking the famous rooms

Hell's Kitchen books out for weeks and the palatable time slots go first, so reserve the moment the window opens. Omakase counters at Nobu and the counters at é by José Andrés need even longer lead times.

Where a chef-name room offers lunch, take it: same kitchen, gentler prices, easier table.
